These pancakes though! Do you even see that stack? It was heavenly! I don't make pancakes too much because they take a little more work then waffles, but I'm on spring break so I decided to try them out!
This was my first attempt at making pancakes using Kodiak Cakes mix and it was definitely a success!
It is almost the same as the waffle recipe, but I added a secret ingredient.... instant pudding mix!
It made the pancakes even fluffier and delicious then usual! I highly recommend trying it out!
And as I have already said before, I love toppings! On this one, I layers each pancake with strawberries, blueberries, bananas and Peanut Butter & Co. White Chocolate Wonderful AND Dark Chocolate Dreams! I died and went to pancakes heaven!
Puffy Kodiak Cakes Pancakes
Serves 1
Ingredients:
1. Mix together all ingredients in small bowl until combined
2. Preheat skillet on stovetop. Stray with Pam or other nonstick spray.
3. Evenly scoop mixture into three pancakes. Flip when ready.
4. Stack on plate with toppings and devour!

Ingredients:
- 1/3 cup Kodiak Cakes
- 1/3 cup unsweetened vanilla almond milk
- 1 tablespoon egg whites
- 1 teaspoon coconut flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- SECRET INGREDIENT: 1 teaspoon instant pudding mix (I used cookies and creme)
- toppings: berries, bananas, peanut butter, vanilla protein glaze, chocolate chips, etc
